Basic Cantonese Batter

1/3 c. flour
1 tbsp. cornstarch
1/3 tsp. baking soda
1/3 c. water
1 egg white
1 tbsp. oil

Stir until blended. Dip fish, shrimp, mushrooms -- just about anything -- in batter and deep fry.
