Yellow Curry Paste

12 dried red chili peppers, seeded, soaked, and coarsely chopped
5 tsp chopped shallots (substitute red onion)
1 Tbsp chopped coriander root [cilantro root, substitute leaves]
1 Tbsp chopped fresh lemon grass (or 1 1/2 Tbsp powdered)
1 Tbsp ground cumin
5 tsp ground turmeric
1 Tbsp peanut oil (or vegetable oil)

Place the chilies, challots, coriander root, and lemon grass in a blender or food processor and whir to make a smooth paste. Add the remaining ingredients and whip until smooth. Or, proceed in the same manner with a mortar and pestle.
