Carrot Casserole

CARROT CASSEROLE

2 lb carrots; peeled,cooked and mashed
2 eggs
3/4 cup milk
1 cup soda crackers, crushed
3/4 cup cheddar cheese, shredded
1/4 cup onion, chopped
1/4 tsp black pepper
Dash of cayenne pepper
1/2 cup butter, melted

In a casserole dish, mix all ingredients except butter. Smooth out mixture
and pour melted butter over top. Bake at 325F for 1 hour; bake for 15 mins
longer
if recipe is doubled.
