Brocolli cheese bake Kelowna BC Canada 2 heads chopped brocolli 4 beaten eggs 2 tbsp flour 1/2 tsp salt 2 cups grated cheddar 1 cup 1% cottage cheese Can of diced mushrooms Microwave chopped brocolli for 8-10 minutes or until tender. Drain well. Combine eggs, flour, and salt in a large bowl. Stir in brocolli, cheese and mushrooms. Pour into casserole dish. Microwave on high for 12 minutes stirring every 3-4 minutes. *mixture will look dry when you start to cook, I add a little of the juice from the mushrooms. Don't chop broccoli to fine, put cott. ch. in blender first then add a bit of lemon juice
