Hi everyone--here's a great casserole for a chilly day (oh yeah, they're coming up!!) CHICKEN PIMIENTO CASSEROLE 4 boneless, skinless chicken breasts 1 tsp salt 3 tbs vegetable oil 1 large onion, quartered 2 (4 ounce) jars pimiento, undrained 2 cups hot water 1 tbs chicken bouillon granules 3 tbs cider vinegar 1 tbs soy sauce 1 tbs sugar 1 tbs cornstarch Sprinkle chicken with salt. Brown in hot oil in large skillet. Reduce heat; cover and simmer 15 minutes. Remove chicken to 13x9 inch baking dish, reserve drippings from skillet. Saute onion in pan drippings until tender. Drain pimientos, reserve liquid. Place slices over chicken; set aside. Combine water, bouillon, reserved pimiento liquid, vinegar, soy sauce, and sugar; gradually stir mixture into cornstarch. Add cornstarch mixture to skillet. Cook over medium heat, stir until thickened and bubbly. Pour mixture over chicken and cover with foil. Bake at 375 degree oven for 20 minutes.
