from Hefei, China 2 cucumbers (small seeded variety) 4 medium tomatoes 1 medium red onion 1 jar Kalamata black olives (Net Wt.1lb, in brine/olive oil, with pits) 1 jar feta cheese (Net Wt. 10 oz, Danish or Greek, packed in olive oil) 1/2 cup olive oil 3/4 cup red wine vinegar (or balsamic) Peel then cut cucumbers in half long-ways Cut into medium thick slices and layer into a large serving bowl Cube tomatoes and layer into bowl Cube the red onion and layer into bowl Drain the Kalamata olives and add the entire jar (be sure to pull off remaining stems) to the mixture Add the olive oil and the wine vinegar to the mix and toss lightly Drain the feta cheese and add to the top of the salad Toss lightly again and serve

cheese (Net Wt. 10 oz, Danish or Greek, packed in olive oil)
1/2 cup
olive oil
3/4 cup
red
wine vinegar (or balsamic)

Peel then cut cucumbers in half long-ways
Cut into medium
thick slices and layer into a large serving bowl
Cube tomatoes and layer into bowl
Cube the red onion and layer into bowl

Drain the Kalamata olives and add the entire jar (be sure to pull off remaining stems) to the mixture

Add the
olive oil and the wine vinegar to the mix and toss lightly

Drain the feta
cheese and add to the top of the salad

Toss lightly again and serve
